Saag and Onion Bhaji Pakora

Sage and Onion are flavours that go together so well, they have become a staple of many side dishes and accompaniments.  Here we have twisted this partnership and created a great side dish or starter for your Christmas feast.

Ingredients

40g/1.5 oz Urad Dal (black lentils)
1 small bunch Spinach
1 medium Onion
3tbsp Chickpea Flour
4 Green Chillies
1/2tbsp Crushed Garlic
1tbsp Crushed Kasoori Methi (dried Fenugreek leaves)
1 tsp Cumin Seeds
1/2 tsp Garam Masala
1/2tsp Bicarbonate of Soda
Salt – to taste
Oil – To deep fry

Wash and soak the urad dal for 4 hours.

Rinse the dal and then grind with a little water to make a smooth paste.

Finely chop onion, chillies, spinach and add into urad dal batter, along with the salt, kasoori methi, garlic, garam masala, cumin seeds, soda and besan/chickpea flour. Mix well. Meanwhile, heat oil in a wok for deep frying.

Make small balls of the pakora mixture and drop carefully into the hot oil, 6-7 in one batch. Deep fry in medium heat until golden brown. Repeat for the remaining mixture.

Serve hot on its own or with your favourite chutney or sauce.
